Tuna Bake

Ingredients

Tuna 1 tin (about 500g)

Eggs 3

Cheddar cheese (½ cup shredded)

Onion 1

Breadcrumbs ½ cup

Salt, pepper

Butter or oil 2 tbsp

Method

Peel and chop the onion and place in a saucepan with the butter/oil on a low heat.  Add silver beet and the juice from the tuna can, cook for a few minutes or until the juice is all evaporated.  Spread silver beet mixture over the base of a baking dish.  Beat the eggs and mix with the tuna and the white sauce and place on top of the silver beet.  Sprinkle the combined cheese and breadcrumbs on top.

Cook in a moderate oven (200-220 deg) for 30 minutes or until brown.

Silver beet 6 leaves, washed and chopped
