Tomato with Damper

If you home grown tomatoes, free-range chicken, basil from your garden and good damper or sourdough bread then this is a beautiful, simple and very nourishing entrée. It looks good too.

Ingredients

(For 4 persons)

Tomatoes 4

Eggs 4

Bread 4 pieces

Basil a few branches

Salt, pepper

Drizzle of olive oil and

balsamic vinegar

Method

Slice the tomatoes and arrange on a plate, then sprinkle chopped basil, salt and pepper on top. Hard boil the 4 eggs. Slice them when cold and put on top of the tomatoes. Slice a piece of damper, place in the middle of the plate with the other eggs on top. (Poach the eggs this time) Douse the lot with olive oil and balsamic vinegar.

(To hard boil the eggs, cook for 6-7 minutes

To poach the eggs, cook for 2-3 minutes in simmering water with a drop
