Scones
Ingredients
Self-raising flour 1 ½ cups
Sugar 1 tbsp
Butter 1 tbsp
Salt ½ tsp
Egg 2
Milk
Yeast 1 tsp
Method
Mix all dry ingredients and rub in the butter. Beat the egg, incorporate into
the mixture, with a small amount of milk to make a small ball of dough. Knead
lightly. Roll out and cut to shapes. Cook in a moderate oven (about 180 deg.)
for 20 to 25 minutes.
For variation you can add ½ cup of mashed vegetable or fruit; the most
popular being pumpkin (made famous by Flo Bjelke Petersen, wife of former
premier of Queensland Sir Joh Bjelke Petersen). A pinch of yeast will make the
scones lighter.
