Pork Chops with Bananas
Ingredients
Pork chops 4 or 6 per person
Bananas 2
Butter 1 tbsp
Peanut oil 1 tbsp
Rum 2 tbsp
Cayenne Pepper
Cream 1 cup (or 1 cup of
stock)
Method
Heat the oil in a frying pan
and brown the pork chops lightly for 5 to 6 minutes on each side (make
sure the pork is cooked right through – no pinkness at all).
Remove the pork from the saucepan and keep warm.
Pour off the excess fat and add butter. Cut the bananas
lengthwise and place them in the saucepan to brown on both sides. To make the sauce: pour the cream or stock into the frypan,
add the rum, bring it to the boil then reduce and season. Place the pork chops on the plate, garnish with the bananas,
and pour the sauce over the top. Serve
with mashed potatoes and peas.
(Apples can be used instead
of bananas)
