Pikelets
Ingredients
Self-raising flour 2 cups
Sugar 4 tbsp
Butter melted 2 tbsp
Salt a pinch
Eggs 3
Bi-carbonate Soda 1 tsp
Milk 1 & 1/3 cups
Method
Mix all the ingredients except the butter in a bowl
then incorporate the milk. Beat the
mixture properly, with electric beaters, if you have some. Lastly, incorporate the butter. With a large spoon or a small
ladle, pour some of the mixture on to a hot grill or a non-stick fry pan.
Flip the pikelet over when bubbles appear in the mixture; cook for a
further 30-60 seconds.
