Omelette
Ingredients
Eggs 6
Cream 1 cup
Potatoes 4
Onions 2
Capsicum 1
Parsley ½ cup chopped
Cheddar cheese ½ cup grated
Butter 1 tbsp
Oil 1 tbsp
Salt/pepper
Method
Peel and cut potatoes, onions
and capsicum into small 1 cm squares.
Place a frypan over medium
heat, add butter, potatoes, onions, and capsicum and fry for about 10
minutes (stirring from time to time) or until cooked and golden brown.
In a container, beat the eggs and cream cheese with a fork and
then mix in the parsley, salt and pepper.
Pour the mixture into the frypan over the vegetables and mix
gently. When the mixture
starts to set, place the frypan under a hot grill until it becomes
golden brown.
