Mushroom Basket
Ingredients
For 4 to 6 persons
Mushrooms 4-5cups
Butter 4 tbsp
Cream ½ cup
Onion 1
Garlic cloves 3
White
wine 1/2 glass
Bay leaves 2, a pinch of
thyme
Crushed black pepper
Salt to taste
Method
Peel and chop the onion and
garlic. Place in a saucepan
with 1 tbsp of butter and fry lightly.
Cut the mushrooms into quarters and add to the frypan.
Cook slowly with the herbs and spices for about 5 minutes, remove
the mushrooms and add the wine to the pan.
Reduce by half, then add the cream and reduce again until the
liquid thickens. Put the mushrooms back into the sauce, bring to the
boil and season to taste. If
the sauce is still too liquid, then reduce again.
When ready to serve, place the mushroom mixture inside the filo
pastry baskets.
For variation you can use
pieces of cooked chicken or seafood in the mixture.
You can also use these
baskets for pies or pastries.
For
4 baskets use 1 sheet of filo pastry per basket, brush with
melted butter, fold in quarters and cover a small mould up side down.
(As in the photo) Brush with more butter. Cook in a moderate oven for
about 5-7 minutes.
