back time for Mayor Brunker
Thirty years ago at
Collinsville State School a little boy call Mike Brunker may have stolen
a sandwich from another little boy call Graham Gordon.
But now it is payback time and I'm stealing Mayor Brunker’s
favorite recipe for everyone to enjoy. Mayor
Brunker’s Chicken Fillet with Mango Chutney Glaze
6 chicken breast fillets 1 tablespoon apricot jam 1 tablespoon mango chutney ˝ cup mayonnaise 1 teaspoon worcestershire
sauce 2 teaspoons grainy mustard 1 tablespoon lemon juice Method
Pound the chicken fillets
lightly with a meat mallet. Place
in dish, combine all other ingredients and add to dish.
Marinate for several hours or refrigerate overnight.
BBQ chicken until cooked through, basting frequently with the
marinate glaze. |
