Liver (Lamb or Veal)
Ingredients
Lamb
(or veal)liver 500g
Puff pastry 1 sheet
Egg yolks 2
Onion 1
Mushrooms 1 cup
Salt, pepper
Oil 2 tbsp
Butter 2 tbsp
Method
Slice the liver in half
lengthwise, season, place in a frypan and sear in hot oil for a couple
of minutes on each side. Remove
from the pan and allow to cool.
Finely chop the mushrooms and
onion and add to the same frypan with the butter.
Cook for a few minutes and season to taste.
Place a sheet of puff pastry on your bench, add half of the
partly cooked liver and spread some of the mushroom mixture evenly over
the top. Follow with the
other half of the liver and then the remainder of the mushroom mixture
on top of that again. Fold
the puff pastry over, place in a non-stick baking dish, brush with the
egg yolks and bake in a moderate oven (200-220 deg) for about 30
minutes.
