Lamingtons
Ingredients
Self-raising flour 2 cups
Sugar æ of a cup
Butter æ of a cup
Eggs 4
Vanilla essence 1 tsp
Milk
For the topping
Coconut
1 cup shredded
Icing sugar
2 cups
Cocoa powder
2 tbsp
Method
Cream the butter and sugar, then
add eggs one at the time, followed by the vanilla.
Fold in the flour and some milk to make the mixture creamy but
not too runny. Bake on a
non-stick tray in a moderate oven (180 deg.) for about 40-50 minutes.
Allow to cool, then cut into 10 cm squares. Finish off by sprinkling the shredded coconut on
top while the chocolate is still warm.
Mix the icing sugar with the cocoa powder and about 1 tbsp of
water. (Too much water will
make the mixture too runny) Dip
the lamingtons in the chocolate mixture or simply use a spoon to cover. Finally, sprinkle shredded coconut all over the Lamingtons
