Chicken
with Avocado and Mango
Ingredients
Chicken Breasts 4
Avocados 2
Mangoes 2
Orange juice ½ cup
Cream ½ cup
Salt, pepper
Green peppercorns 15
(optional), or more if you like it hot.
Method
Remove the seeds from the
avocados, peel and cut one into 4 pieces. (save the other avocado for
decoration) Peel the
mangoes and remove the seeds over a dish to preserve the juice.
Squash the flesh of one mango for the sauce and save the other
mango for decoration.
Insert º avocado into each
of the chicken breasts and place in an ovenproof dish with the orange
juice, flesh of 1 mango and peppercorns.
Cook in a hot oven (220-240) for about 15 to 20 minutes.
Remove the chicken breasts from the dish and pour in the cream
and seasoning. Reduce until
the consistency of the sauce is creamy but not too thick.
To serve, pour the sauce over the chicken and decorate with
sliced mango and avocado.
