Boiled beef
Ingredients
For 4 to 6 persons
Beef 1-1 ½ kg
(brisket or
silverside)
Onions 2
Parsnips 2
Carrots 2
Leeks 2
Turnips 2
Method
In a large saucepan or camp
oven, place the meat, peeled vegetables, herbs and spices.
Cover with water, bring to the boil and simmer for 1 hour and
then add the cabbage. Simmer
for a further 1 hour or so until the meat is tender.
Place the meat on to a large
serving plate with the vegetables displayed around it.
This dish can also be served with mustard, gherkins and boiled
potatoes.

Garlic cloves 6
Bay leaves 2, a pinch of
thyme
Whole black peppercorns 1 doz
Salt
