Whitebait

Ingredients

Whitebait 4 cups (or 500g)

Lemons 2

Dill 1 bunch (1/2 cup) finely chopped

Flour 2 cups

Milk 2 cups

Oil for deep-frying

Method

Rinse the whitebait and soak it overnight in the milk.  Mix the dill, salt and pepper with the flour.  Drain the whitebait thoroughly and roll it in the flour mixture, until each piece becomes dry.  (Add more flour if necessary)  Deep-fry the fish in very hot oil.  Always make sure the oil is very hot when you deep-fry the fish.  If you only have a small amount of oil, cook º of the whitebait at a time.  (Watch for oil spill and keep away from the children)  Drain the fish well, sprinkle with more salt and serve with lemon wedges.
