Steak
Crumbed
Ingredients
Steak 4 pieces of topside
Eggs 2
Bread Crumbs 1 cup
Flour 1 cup
Cheese 1 cup grated mature
cheddar
Tomatoes 2, sliced
Butter 2 tbsp
Method
Beat the 2 eggs with ½ cup
of water. Pound the steak
out thinly. Roll the steak
in the flour on both sides; dip in the egg mixture and then in the
breadcrumbs. Press the breadcrumb mixture firmly on to the steak pieces
and shake off any excess. Add
the butter to a fry pan over a medium to high heat and brown the steak
on both sides. Sprinkle
salt and pepper over the sliced tomato and place the tomato on top of
the steak pieces. Spread
the grated cheese evenly over the top of the tomato and place under a
grill to melt the cheese. If
you like crispy cheese, then leave it longer until it’s brown.
For variation you can use
mozzarella cheese or even boccoccini, but you will have to slice the
boccoccini and only just melt it.
