Pork Spare Ribs

ngredients
(For 4 to 6 persons)
Spare ribs (American cut) 1.5
kilos
Onions 2 cut into quarters
with the skin
Garlic cloves 6 crushed with
the skin
Peppercorns 6
Bay leaves 2, a pinch of
thyme
Cloves 4
Salt
Method
Place the spare ribs in a
large saucepan with all the ingredients, herbs and spices and cover with
water. Bring to the boil and simmer for 1 hour and 20 minutes.
To make the sauce:
In a saucepan add 3 cups of tomato sauce, 1/3 of a cup of
Worcestershire sauce, 1/3 of a cup of red wine vinegar and 1/3 of a cup
of raw sugar. Bring to the boil.
To serve, place cooked spare
ribs on a tray under a grill, brush with the sauce and cook until
crispy. If sauce is too
thick add some of the cooking juice.
