PAVLOVA
Ingredients
Egg
whites 4
Sugar
1 cup
Corn
flour 1 tsp
Vanilla
essence ½ tsp
Vinegar
½ tbsp
Cream
1 cup
Kiwi-fruit
5 (2 passionfruit optional)
Method
Place
egg whites in a bowl and blend with a hand-held electric mixer,
incorporating the sugar slowly until soft peaks form.
Fold in the corn flour, vinegar and the vanilla essence.
Place the mixture in a flat baking tray and cook in a moderate
oven (150 deg) for 15 minutes. Keep
cooking for at least one more hour.
Reduce the oven temperature, if the pavlova is getting too brown. It must form a crust on top and be soft inside.
When cooking a pavlova, the oven temperature is very critical.
Beat the cream until soft but still firm.
Spread the cream on top of the pavlova.
Peel the kiwi-fruit, slice into even pieces and use to decorate
the cake. For
decoration, you can also use passionfruit, strawberries, banana etc.
