Mussels
with White Wine.

ngredients
(for 4 persons)
Mussels 2kg
Onion 1 peeled & chopped
finely
Parsley ½ cup chopped finely
Bay leaves 2
Cloves 2
Black peppercorns 6
Thyme ½ tsp
Garlic 6 cloves peeled &
chopped finely
Method
Scrape and wash the mussels. In a large saucepan melt the butter and add the onions,
garlic, white wine; then the mussels, herbs and spices, (not the
parsley). Cover with a lid
and bring to the boil. Keep
cooking on high heat until the mussels open.
(It may take 5 minutes or so)
Remove the mussels, place them on a serving plate and keep
boiling the remaining juice. Add the cream to the juice and boil, until it has a nice
creamy consistency. Pour
the sauce over the mussels and sprinkle with chopped parsley.
