Kangaroo Kebabs
Ingredients
(For
4 people)
Kangaroo meat 600 g (strip
loin or rump)
Onions 2
Capsicum 1 red or green
Garlic 6 cloves
Oil 1 cup
Method
Dice kangaroo meat, onions
and capsicum into 1½ cm squares. Chop
garlic finely.
Mix everything in a bowl with
the oil. Add 1 bay leaf, a
pinch of thyme, and pepper. Leave
for a couple of hours or overnight.
Place the pieces of meat, onion and capsicum alternatively on a
skewer. Makes 4 large or 8
small kebabs. Cook under a
very hot grill or on the barbecue.
