Fruit Chutney

Ingredients

Apples 4 (or 6 mangoes)

Tomatoes 3

Onions 2

Sugar 1 cup

Vinegar 1 cup

Raisins ½ cup

One teaspoon of the following: Cayenne pepper, ground cloves, grated ginger, peppercorns, allspices, turmeric, curry powder, salt. (Use only the spices you have on hand; you can change the spices from time to time.)

Method

Peel and dice apples, onions and tomatoes.  Place in a saucepan (with a thick base), add the vinegar and then bring to the boil.  Add the sugar and all the spices and then simmer for 2 hours.

Bottle whilst hot, allow to cool and then seal.  (You can substitute with other fruits and increase or decrease the vinegar and sugar to your taste.)
