Minister
Bligh’s Corned Beef Fritters
Ingredients
(makes 12 to15)
Self-raising flour 1½ cups
Eggs 2
A pinch of sugar
Milk ½-1 cup
Chopped corned beef 1½ cups
Corn kernels ½ cup
Peas ½ cup
Grated cheese ½ cup
Chopped parsley 1 tbsp
Salt, pepper
, Olive
oil ½ cup (substitute with butter if you’re French….)
For variation, you can use:
chopped chicken or any left over meat,
grated zucchinis, onions, garlic, peas, carrots, anchovies etc….
Method
Place flour in a bowl and slowly whisk in the
eggs, sugar and the milk. (the mixture must be thick and creamy)
Stir in the corned beef, corn, peas, cheese, parsley, salt and
pepper. If you use other ingredients, there should be no more than 2½
cups altogether. Heat half
of the oil/butter in a large frypan and drop a couple of tbsps of the
mixture in it to make a fritter about the size of a small pikelet.
Cook until browned on both sides.
Repeat the process until you use all the mixture.
Put more oil/butter into the frypan if necessary.
To serve, you can top the fritter with sour
cream, yoghurt, chilli sauce etc… but Minister Bligh’s favourite is
good old fashioned tomato sauce.
