Avocado with mango
Ingredients
Avocados 2
Mango 1
Vinaigrette ½ cup
Cream 2 tbsp (optional)
Ginger 1 tbsp grated
Lettuce ½
Corn beef 1 cup slice in strip
Olive oil 2 tbsp
Balsamic vinegar 2 tbsp
Method
Cut the avocados in half,
remove the seed and peel. Slice
like a fan and place on a plate. Arrange some lettuce and the corn beef
next to it. Peel and cut mango into small pieces and mix with the
vinaigrette; (see vinaigrette page?) add the ginger, cream and season if
necessary. (Add vinegar if
you like it with more tang.) Pour
mixture over the avocado and drizzle olive oil and balsamic vinegar over
the lettuce and the corn meat. If
you want to be more creative, then serve with mango and ginger sorbet.
This recipe is my own design;
I was asked to make up a recipe in 1985 to highlight Australian produce
for a book called “The great cooks of Australia”.
It is called “Mango des tropiques” and today this recipe is
widely used throughout the world (with some variations of course.)
