The day before the wedding
Yes, tomorrow is the wedding of an Australian girl and a Canadian boy…
I promised my niece Samara a year ago that I would do a croquet en bouche for her wedding, thinking the wedding may not happen or I will find someone else to do it in Calgary or Banff. I was wrong, very wrong, the wedding is still on and no one in Banff or Calgary wants to do it. (I guess the problem is the transport, and they are too busy anyway)
(Young man: come to Canada and open patisseries, lots of work for you!)
I better get going, as we have to be in Banff tonight.
Number one problem is I don’t have a mold and nobody wants to lend me one and no one knows where to get one.
On the road we passed lots of road works and I asked a worker from the Canadian main roads department …..if they could sell me one of those witches plastic hats. Because of the extraordinary circumstances, they were happy to give me one.
Now we can get going.
I arrived at Clint sister Terri’s place early in the morning and she had coffee and red wine waiting for me. She didn’t know what sort of person I was and she was ready for anything, somebody must have talked to her about me!!!!
She has a beautiful kitchen and all the ingredients ready. When she saw me with the witches hat, she was a bit taken back but she is a good country girl and she understood our problem.
Terri is a wonderful person, very organized and ready to do anything, she even gave me her teenager son’s shoes for the wedding, as of course I only had motorbike boots…
In no time we beat up some Pate a choux, Cream Patissiere, Toffee, and before lunch the croquet en bouche was up, ready to go to Banff. That’s when the trouble started.

Must have been a wonderful trip Michel! Looking forward to the next chapter on the croquet en Bouche. The wedding is over I guess by now I hope you all behaved yourselves but still managed to enjoy yourselves love Chris x x
